White Balance - Turn this either to a really high setting (such as shade) to practice with really warm colors. Or else to a low setting (such as florescent light) to practice with very cool colors. Then simply practice creating interesting and beautiful pictures with this extreme white balance setting.

Aperture (F-Stop Number) - Practice this with either a very high number (such as f/16) or as low of a number as your lens will allow (such as f/1.8) A high number is challenging because there is much less light let into the camera. Also with a high number the depth of field is much larger causing most of the image to be in focus. A low number on the other hand will allow much more light into the camera, but the depth of field will be far smaller causing most of the background to be out of focus..
