The primary distinction, though, is that with cultigens, we don’t know when or where those plants crossed into “new” territory. Related plants were likely cultivated for thousands of generations before that magical moment. Only in deep time does a plant like ginger becomes so distinguished from its near relatives that we consider it a human creation.

Ginger is used fresh, cured, dried, and powdered. The rhizomes can be eaten young or after senescence. You can even eat the shoots (which are really leaves, called psuedostems) chopped.
