Steak with Paprika Avocado Dip

A juicy protein, vitamin, and mineral-rich steak is so quick and easy to cook.

2 x 150g/5oz lean rump, sirloin or fillet steaks

olive oil, for brushing

100g/4oz spinach, washed and trimmed

salt and freshly ground black pepper

PAPRIKA AVOCADO DIP

1 small ripe avocado, peeled and stoned (pitted)

2 tbsp 0% fat Greek yoghurt

1 tsp sweet paprika

a squeeze of lemon juice

1.Make the paprika avocado dip: use a fork to mash the avocado flesh with the yoghurt and paprika in a bowl. Add the lemon juice, season and set aside.

2.Lightly brush both sides of the steaks with oil and season with salt and pepper.

3.Heat a griddle pan over a high heat, then add the steaks. For rare meat, cook for 1–2 minutes on each side; for medium, 3 minutes on each side; and for well done, 4 minutes on each side. Remove from the griddle and leave to rest for 2–3 minutes.

4.Steam the spinach for 2 minutes until wilted.

5.Serve the warm steaks and spinach with the paprika avocado dip.
