CHAPTER 5- 10 PALEO BREAKFAST RECIPES
Breakfast, the first and most important meal of the day, sets the tone for your entire day. If you are used to fueling and filling up on a typical carb-loaded breakfast, the question of what to eat on the Paleo Diet can be an overwhelming one. Here are some filling options for your Paleo breakfast.
Spicy Mexican Scrambled Eggs
These are not your standard, ho-hum scrambled eggs. Theyâre sure to add some pep to your step in the morning.
Ingredients
1 tsp coconut oil (divided)
2 Eggs
¼ Cup Red Onions diced
¼ Cup Red and Green Bell Peppers diced
1/8 tsp. Paprika
1/8 tsp. Ground Cumin
Red pepper flakes to taste (optional)
½ Small Avocado diced
½ Medium Tomato diced and seeded
½ tsp. Cilantro chopped
½ tsp. Oregano chopped
1 tsp. Lime Juice
Sea salt and Black Pepper to taste
Directions
Scramble the eggs and set aside. In a non-stick skillet combine half the coconut oil, red onions, red and green bell peppers, paprika, cumin, and red pepper flakes. Sauté until vegetables are soft, about 5 minutes. Meanwhile, combine the avocado, tomato, cilantro, oregano and lime juice. Add salt and pepper if desired. Scramble the eggs in a skillet using the remaining coconut oil. Add in the vegetable mixture when eggs are almost finished cooking. Top with avocado and tomato salad.
Baked Berry Breakfast Bars
Try saying that five times fast! If youâre in the mood for a decadent breakfast that feels almost like dessert, this is the recipe for you.
Ingredients
For the crust
¼ Cup Macadamia Nuts chopped
¼ Cup Pecans chopped
¼ Cup Walnuts chopped
¼ Cup Almonds chopped
Cashews chopped
3 - 4 Dates (blended with warm water to make a paste)
½ Cup Shredded coconut
1/8 tsp Ground Nutmeg
2 Tsp Coconut Oil or Ghee (Clarified Butter)
For the Filling
½ Cup Blueberries
½ Cup Strawberries
½ Cup Raspberries
½ Cup Blackberries
2 -3 Dates (blended with warm water to make a paste)
1tsp Lemon Juice
Directions
Crust: Preheat the oven to 400 degrees. Toast the nuts and coconut in a skillet, and then let the mixture cool. Combine the toasted nuts and coconuts, dates, nutmeg and coconut oil or ghee and press into a baking dish. Bake for 12 minutes. Set aside.
Filling: Combine the berries, dates, and lemon juice in a saucepan. Cook until the mixture reduces to the consistency of fruit compote. Cool for about 10 minutes.
Pour the fruit filling over the crust and spread evenly. Let cool for another 30 minutes or overnight.
Chocolate Almond Protein Smoothie
Diet! What diet? One sip of this will make you question where this smoothie has been all of your life.
Ingredients
2 tsp. 100% Natural Unsweetened Cocoa Powder
1 Tbsp. 100% Natural Almond Butter
½ Banana
½ Small Avocado
1 -2 Dates
¾ Cup Almond Milk (Homemade, if possible)
Ice
Directions
Combine all ingredients in a blender until smooth.
Baked Mediterranean Eggs in Tomato Sauce
This is so simple and so tasty that it will definitely become one of your breakfast staples.
Ingredients
For the sauce
2 Medium Tomatoes diced
2 Garlic Cloves minced
2 tsp Basil chopped
Olive oil
For the eggs:
4 Eggs
½ tsp Oregano chopped
½ tsp Parsley chopped
¼ tsp Rosemary chopped
¼ tsp Thyme chopped
Sea Salt and Black Pepper to taste
Directions
Tomato sauce: In a saucepan combine olive oil, tomatoes, garlic and basil.
