Chicken Fajita Salad SERVES 4

PREP TIME: 10 minutes ▪ TOTAL TIME: 25 minutes

¼ cup coconut aminos

4 small boneless, skinless chicken breasts (about 1 pound), cut into bite-size pieces

1 bell pepper, seeded and cut into long julienne strips

1 medium white onion, cut into rounds

¼ to ½ teaspoon mild chili powder, or to taste

¼ teaspoon sea salt, or to taste

4 cups torn lettuce

Put 2 tablespoons of the coconut aminos in a large nonstick skillet over medium heat and when hot, cook the chicken for about 7 minutes or until lightly browned. Add the bell pepper, onion, chili powder, salt, and the remaining 2 tablespoons coconut aminos. Cook for about 5 minutes more, until the onion is soft. Serve over lettuce.
