1 Preheat the oven to 200°C/Fan 180°C/Gas 6. Place the lamb mince in a large roasting tin and roast for 30–35 minutes, stirring a few times to break it up, until roasted and dark brown. It should look like instant coffee granules. You can also do this in a large frying pan on the hob if you like – just make sure you get it good and dark. Tip the mince into a colander and set aside to drain.

2 Warm a splash of olive oil in a large saucepan over a medium-low heat. Add the onion and garlic and sauté gently for 10–15 minutes until soft, stirring from time to time. Add the oregano, cinnamon, dried mint and cracked black pepper. Cook, stirring, for 2–3 minutes. Add the tomato purée and cook for a further 3–4 minutes.
