ALMOND-CRUSTED PORK CUTLETS

MAKES 2 (4-OUNCE) SERVINGS / PREP TIME: 5 MINUTES / COOK TIME: 10 MINUTES / TOTAL TIME: 20 MINUTES

Comfort food made healthy, these cutlets are dredged in nutrient-dense ground almonds, instead of flour or breadcrumbs. Rather than deep-frying them, they’re crisped up in a small amount of olive oil. Try adding Chunky Applesauce (here).

1 egg, lightly beaten

¼ cup almond flour

1 teaspoon Italian seasoning or dried oregano

Pinch salt

Pinch freshly ground black pepper

2 (4-ounce) boneless pork loin chops, trimmed of excess fat

1 tablespoon extra-virgin olive oil

1 In a shallow bowl, lightly beat the egg.

2 In a separate shallow bowl, mix the almond flour with the Italian seasoning, salt, and pepper.

3 Coat the pork chops in the egg, and then dredge the egg-coated pork in the almond flour mixture. Shake to remove any excess.

4 In a medium skillet over medium-high heat, heat the olive oil. Add the pork chops and cook, turning once, until golden brown and cooked through, about 5 minutes per side.

5 Transfer to plates and let rest for 5 minutes before serving.

Ingredient tip: If you don’t have almond flour on hand, you can finely grind a handful of whole almonds in a food processor and blend into a flour.
