a) In the diagram above, at position 'a' your blood glucose level is stable at approximately 90mg per 100cc of blood.
b) You then eat a confectionery bar and at position 'b' your blood glucose level rises instantly (this is the sugar high/energy high that you experience).
c) Your pancreas then releases insulin to cope with the many pieces of fruit or equivalent sweetness that it thinks you have just eaten and at position 'c' your blood glucose level drops below where it was before you ate the confectionery.
d) This is when your body cries out to be fed and, if you reach for more confectionery, your blood glucose level will shoot back up again as at position 'd'.
e) More insulin will be released and your blood glucose level will then fall below normal levels again, as shown at position 'e', as too much insulin has been released to cope with the second confectionery bar.
When your blood glucose level drops below approximately 65mg per 100cc of blood, your cravings for food will be huge as your body is literally in danger mode. Your blood glucose has dropped to a level which is detrimental to your health and your body will try to do anything to get you to eat to raise your blood glucose level back to normal. If you have a banana or a similar whole carbohydrate you have a reasonable chance of stabilising your blood glucose level. However, if you reach for another confectionery bar you will start the cycle all over again.
This is why once you start eating sweet foods (sweets, ice cream, chocolate, biscuits, cakes etc) you can't stop. It is so much easier not to have chocolate at all than it is to try to eat a limited amount – this really is like asking an alcoholic to have one drink and no more.
This is also why you may find it easier to eat nothing, rather than to try to eat a small amount. When you 'starve' (don't eat) your blood glucose level is low, but at least it is stable. Hence, cravings are actually easier to control when you eat nothing.
The state of Hypoglycaemia can be brought on temporarily and quickly by consuming processed carbohydrates. When we say that someone has Hypoglycaemia what we are really saying is that their pancreas/insulin releasing mechanism is out of balance and that they are constantly in a state of high or low blood glucose. They are rarely at a nice, even, steady level of blood glucose. They swing from one extreme to the other and suffer the energy highs and lows that go with it. This is almost certainly as a result of long term consumption of processed carbohydrates.
Some people do seem to be able to eat processed carbohydrates and 'get away with it'. Their bodies don't seem to release too much insulin, which suggests that some people may be more susceptible to Hypoglycaemia than others. However, in the majority of people, prolonged consumption of processed carbohydrates is likely to cause Hypoglycaemia.
