Scoop out the pulp from each half of the squash, and keep the squash shell 1/2 thick. Keep the shells aside and mash the pulp with the help of a fork until smooth. Keep this aside.
Heat olive oil in a large non-stick pan over a medium-high flame. Stir in the onion and sauté until it is golden brown, add in the tomato, and cook until it turns into a thick gravy.
Then, add in the squash pulp, salt, and pepper and cook it for a period of 5 minutes while stirring occasionally.
