Buckwheat, Apple, Cranberry Avocado Salad

Ingredients

1 medium Granny Smith apple

100 g (3.5 oz.) buckwheat groats

1 sliced ripe avocado

Dried cranberries

Baby arugula

1 clove garlic

The juice of ½ lemon

Preparation

Bring the buckwheat groats to a boil and leave to simmer for 10 minutes.

Transfer the buckwheat to a serving bowl or place.

Add the apple, cut into matchsticks, and the remaining ingredients. Mix the salad well.

Season with lemon juice and olive oil. Additionally, you can use maple syrup or Dijon mustard.
