Have a Stock of Cooked Chicken Breasts on Hand?

Cook a lot of boneless chicken breasts (using your favorite method of cooking— grilling, poaching, baking, sautéing, pan-frying, steaming, etc.) and then preserve them from having them on hand for cooked chicken recipes like this one. You can have a wonderful meal on the table in no time, as frozen chicken breasts thaw very quickly. Freezing whole cooked chicken breasts rather than diced chicken meat is a better idea. The latter would dry out quicker. Some recipes, as this one does, will call for cups of diced chicken, but others will refer to whole breasts, which are then diced. So, you can dice a few chicken breasts if you like, and leave some whole. Freeze for 3 to 4 months in a zip-top bag or other containers.
