Preheat the oven to 500°F.

Place the pizza stone inside, if using.

Bake the dough on a parchment-lined baking sheet or a pizza stone for 11 minutes until golden brown.

Bring an inch of salted water in a pot to boil. Place the lobster tail on a steamer rack and cover the pot. Cook for 8 minutes. Remove the lobster and allow to cool.

Remove the meat from the tail and chop. Mix with the cherry tomatoes, ginger, shallots, mozzarella and olive oil. Top the crust with the mixture.

MARGHERITA

3 Tbsp tomato sauce

8 oz pizza dough

4 large basil leaves

2 oz fresh mozzarella, cubed

1 Tbsp extra-virgin olive oil
