3. Limit foods rich in saturated fats. Aim to keep saturated fat under 7 percent of total calories. To reduce saturated fat in a vegetarian diet, limit your use of butter, cheese, and other high-fat dairy foods; eggs; and tropical oils. If you use dairy products, replace high-fat items such as whole milk and sour cream with nonfat or low-fat items, such as skim milk and nonfat yogurt, and replace butter with oil or nonhydrogenated margarine. Try scrambled tofu instead of scrambled eggs for breakfast, and substitute ground flaxseeds or commercial egg replacer for eggs in baking.
