For an extra hit of plant-based diversity, steam 100g (3½oz) pak choi leaves, a handful of mangetout and green beans for 2 minutes.
Add the steamed vegetables to the pea broth just before serving.
1. Put the coconut milk, lemongrass, vegetable stock, red chilli and ginger in a saucepan and simmer gently for 15 minutes to allow the flavours to infuse the coconut milk.
2. Remove the lemongrass and ginger (and the chilli if you donât like it too hot) from the coconut milk and add the frozen petit pois. Bring back to a simmer and cook the petit pois for just 1â2 minutes, then remove from the heat.
3. Transfer the mixture to a blender and blitz to a smooth purée. Return the broth to the saucepan and season with fish sauce and salt to taste. Finish with the lime zest and juice. The broth is ready to be eaten; top with a few extra steamed green vegetables if you prefer.
