Ntui

What the media rarely tell us is that there are some parts of sub-Saharan Africa that still have a diverse ecosystem and that are home to some of the most delicious and complex cuisines on this planet. One such area that I am personally familiar with is Ntui, a small village in the rainforest of central Cameroon. This was my home for the year I spent working for Save the Children Federation as a rural health trainer. At that time I did not have a formal interest in cold spots; in retrospect, however, I realize that I was living solidly in a colon disease cold spot zone.

Fortunately Ntui has not changed very much since I was first there in the mid-1980s. According to medical colleagues who have been there recently, the mayor’s house and the bar now have electricity, a couple of the streets are paved, and the hospital has a few more walls. However, the most vital parts of village life remain the same. On any given day, the smell of simmering peanut stews, fresh grilled chicken, and plantains still wafts out from the courtyard of every mud compound. There is still a bustling Tuesday and Saturday market overflowing with locally grown fruits and vegetables of all varieties. The porc-épic (porcupine) remains a local delicacy, and no one can throw a funeral or a wedding without spending days preparing a multicourse feast. But what surprised me the most was to hear that Madame, one of the most memorable women in the village, was still serving up the same wonderful foods that she has for decades.
