• 4 slices low-sodium rye bread or whole-wheat flatbread • 1/2 small cucumber, very thinly sliced
• 2 tablespoons fat-free cream cheese • 1/2 small red onion, very thinly sliced
• 1 teaspoon prepared horseradish • 2 thin slices provolone
• 6 ounces sliced, homemade, roast turkey breast • Canola oil spray
Spread 2 of the bread slices with cream cheese and horseradish, and then layer on the turkey, cucumber, onion, and provolone.
Top each with another slice of bread.
Coat a nonstick skillet lightly with canola oil spray, and toast the sandwiches over medium heat until well browned.
Serves 2.
