Extreme low-fat diets were all the rage more than 10 years ago when researchers found that people with heart disease and high cholesterol had a build-up of fat in their arteries. The underlying assumption was that dietary fat caused clogged arteries.
Fast forward to the present. Eating high amounts of dietary fat is only one factor in heart disease. Some other factors are a high intake of starchy foods, high insulin and cortisol levels in the blood, lack of exercise, and a lack of Essential Fatty Acids in a personâs diet.
Today, many medical practitioners and dietitians recommend eating low-fat, so this chapter gives you some ideas of what to eat if you need to eat low-fat meals.
