MISO-HONEY-BUTTER ROASTED CHICKEN

Gluten-Free, Grain-Free, Nut-Free

Serves 4 / Prep time: 10 minutes / Cook time: 40 minutes

Roast chicken is my go-to meal for dinner whenever I can’t figure out what to cook. The smell wafting through the house, the crispy skin, the juicy meat—all of that makes it the perfect comfort food. I like to switch things up by using different spices. This roast chicken is flavorful and comforting, and it’s so easy to make.

2 bone-in, skin-on chicken breasts halves

6 chicken drumsticks

6 tablespoons ghee, melted

3½ tablespoons red miso

3 tablespoons raw honey

Sea salt

Ground black pepper

1.Preheat the oven to 400°F.

2.Place the chicken, skin-side up, in a single layer in a 9-by-13-inch baking dish.

3.In a medium bowl, combine the ghee, miso, and honey.

4.Gently separate the skin from the chicken by carefully sliding two fingers in between the skin and the meat. Put approximately 1 tablespoon of the miso mixture under the skin of each piece of chicken, spreading it as best you can.

5.Rub the remaining miso mixture on top of the skin. Season with salt and pepper.

6.Roast until the chicken is dark brown and cooked through and an instant-read thermometer inserted into the thickest part registers 170°F, about 40 minutes.

7.Serve with pan sauce spooned on top. Enjoy!

Tip 1: Ghee is clarified butter that has had the milk solids removed. It is lactose free and has the delicious taste of butter.

Tip 2: Honey is a Chinese herb called feng mi, and it’s used to lessen some coughs, boost energy levels, and relieve constipation. As a general rule, the darker the honey, the better it is for you. Raw honey is also good for brain function and can help promote sleep. Raw honey also has the unique power to expose the body to trace amounts of pollen, working like a seasonal allergy shot, so add some to your diet during allergy season.
