1 cup red wine vinegar

2 cups water

1 tablespoon fresh oregano, or 2 teaspoons dried

2 bay leaves

2 cloves garlic, minced

1 head cauliflower, cut into florets

1 red pepper, seeded and thinly sliced

1 tablespoon olive oil

1/8 teaspoon salt

Black pepper to taste

1. Bring the vinegar, water, oregano, bay leaves, and garlic to a boil in a large pot.

2. Add the cauliflower and red pepper and return to a full boil. Cover and cook for 1 minute.

3. Remove from the heat and let the vegetables cool in the hot liquid. Remove the vegetables from the cooking liquid and season with the oil, salt, and pepper. Serve.
