Glucose, Fructose and Fiber
Carbohydrates come in three basic forms; glucose, fructose and fiber. The body uses glucose to produce energy. The body prefers to use glucose as its fuel over fructose. Excessive fructose is treated like a poison, and shunted to the liver where it is processed.
Fructose is easily stored as fat, but can be converted into glucose. Fiber can’t be used as energy for the brain or cells, but does feed the beneficial bacteria in our gut.
An interesting fact is that carbohydrates are the only non-essential macronutrient. The body is able to makes its own glucose using amino and fatty acids through a process called gluconeogenesis.
While this is an interesting fact, I do not believe that going low carbohydrate is the best choice for everybody, but for some it can be very therapeutic. Consider your own personal context when looking at nutrition recommendations.
