Vegetarian Chili

Serves 4

2 medium onions, chopped

3 cloves garlic, minced

One 15-ounce can low-sodium cannellini beans, rinsed and drained

One 15-ounce can low-sodium black beans, rinsed and drained

One 15-ounce can low-sodium diced tomatoes

2 bay leaves

24 ounces low-sodium chicken broth

1/4 cup chopped fresh cilantro

1 pinch freshly ground white pepper

1 tablespoon extra-virgin olive oil

Heat the olive oil in a large soup pot over medium heat.

Add onion and garlic and cook until browned.

Add the beans, tomato, bay leaves, and broth and bring to a boil. Reduce heat, and let simmer for 25 minutes.

Add the cilantro and pepper, let simmer for two more minutes, and then serve.
