Preheat the oven to 375°F (190°C, or gas mark 5).

Place the walnuts on a sheet pan and bake for about 12 minutes, until the walnuts just begin to brown. Remove the sheet pan from the oven and set aside, allowing nuts to cool completely before adding them to the salad.

In a large bowl, mix the radicchio, cauliflower, and onion. Crumble the feta over the salad.

In a small bowl, whisk together the garlic, vinegar, mustard, shallot, and oregano. Slowly whisk in the oil. Season with the salt and pepper and mix the dressing into the salad. Let the salad sit for 1 hour in the refrigerator and top with toasted walnuts just prior to serving.

YIELD: Makes 6 (about 1/2-cup) servings.
