When it comes to lunch, you probably want to just grab something and not spend too much time, if any, prepping it. You can make this easier on yourself — it comes down to proper planning and organization. Lunch recharges you after a busy morning and sets the tone for the rest of the day. You want to make sure it’s balanced, varied, and filling enough that it lasts until snack time. (See Chapter 14 for tips about snacks.)
The best way to tackle lunch as a beginning plant-based eater is to make a fantastically filling salad or satisfying soup. Both of these options can be modified with different veggies and enjoyed any time of year; however, you may want to lean more in the salad direction during the warmer months and toward soups in the colder ones.
In this chapter, I give you some great ideas for making simple, quick lunches that you can pack (even in a pinch) and take with you for the workday or out on the town. If you’re at home during the day, these are easy go-to meals that you can pull out and put together with very little effort.
