If you have grain-eaters in the family, or you’re a devotee of Paul Jaminet’s “safe starches,” you can serve rice with this. Me, I eat it straight. Safe starches aren’t so safe for those of us with lousy carb metabolisms.

Bulgogi Skewers

As Korean-ish skewered beef, this is quick and easy to make. While this assumes it’s a main dish, you can make these smaller and serve them as pick-up food at a party. Even making the seasoning sauce, this is only five ingredients. You’ll need eight skewers for this. If they’re metal, you’re good. If they’re bamboo, you’ll have to remember to put them in to soak in the morning or for at least a half hour before cooking time.

SERVES 4

1 beef round steak (1 pound, or 455 g)

Korean-ish Seasoning Sauce (See page 170.)

2 tablespoons (16 g) sesame seeds

Per serving: 263 calories, 12 g fat, 27 g protein, 10 g carbohydrate, 1 g dietary fiber, 9 g net carbs

Cut the steak across the grain into thin strips. (This is easier if it’s halfway frozen.) Throw the strips in a zipper-lock bag, pour in the sauce, and seal, pressing out the air as you go. Turn the bag a few times to make sure all of the strips are coated. Throw it in the fridge and let them sit for at least a few hours. While you’re at work is perfect.

Is it dinner time? Turn on the broiler or fire up the grill. Grab 8 skewers. Pull the bag out of the fridge and drain the marinade off into a bowl.

Thread the beef on the skewers, bending it back and forth, accordion-fashion.

Broil the skewers 6 to 8 inches (15 to 20 cm) from the heat or grill them, brushing them with the reserved marinade when you turn them. (If your broiler is like mine, you may want to turn your broiler pan end-to-end at this point to encourage more even cooking.) They shouldn’t take more than 5 or 6 minutes.

In the meanwhile, stir the sesame seeds in a dry skillet over medium-low heat until they start to smell toasty. When the beef is done, plate the skewers, sprinkle the sesame seeds over them, and serve immediately.
