2 wood planks

2 whitefish fillets

¼ teaspoon seasoned salt

¼ teaspoon paprika

¼ teaspoon black pepper

1 teaspoon chopped fresh thyme

1 teaspoon chopped fresh parsley

½ teaspoon chopped fresh chives

Juice of ½ lime

1. Soak wood planks in water for one hour.

2. Preheat the grill to medium-high.

3. Remove the planks from the soaking water and lightly spray both sides with cooking spray.

4. Place the fillets on a baking sheet.

5. In a small bowl, combine the salt, paprika, and pepper.

6. Sprinkle evenly over both sides of the fish, rubbing it into the fillets.

7. In a small bowl, combine the thyme, parsley, chives, and lime juice. Set aside.

8. Place the planks on the grill grate and allow to heat on one side for 3 minutes.

9. Flip the planks over and place the fillets on top.

10. Cover and grill for 12 minutes or until the fish is opaque and flakes easily with a fork.

11. Remove fish from the planks and transfer to a serving plate.

12. Remove planks from grill.

13. Smear fish on one side with the herb rub and serve immediately.
