In America, people developed eating traditions that have generally revolved around a big hunk of protein in the middle of the plate, with little bits of vegetables and potatoes on the sides. This is partly because of our frontier past. Fresh vegetables were hard to come by, but beef was wandering around everywhere!
When you encourage people to eat more vegetables, they think it means sticking with this classic approach but changing the ratios: small meat, big veggies. This doesn’t sound very exciting, because vegetables on their own can be … well, boring.
People in other cultures, especially Asian ones, have a different solution. They take the small bits of meat, combine them with lots of vegetables, cook it all together, and pour some delicious sauce over the top. The meat and sauce contribute the flavor, the vegetables add crunch and vitamins, and—presto—you’ve got a delicious, healthy, and affordable meal with no boring bites!
Stir-fries are just one example of different ways to start thinking about dinner. Hearty one-pot soups and stews are another. India’s cuisine is particularly heavy on the vegetables—and much easier to cook than people think. Take Morocco’s couscous, France’s ratatouille, Mexico’s burritos and enchiladas; almost every culture has come up with brilliant ways to make vegetables yummy. Start experimenting with this week’s recipes and watch your family perk up at the dinner table.
