Corndog Muffins

Serves: 10

Ingredients:

● ¼ cup blanched almond flour

● ½ tablespoon psyllium husk powder

● 1/8 teaspoon salt

● 2 tablespoons butter, melted

● 3 tablespoons sour cream

● 5 Lit’l smokies, halved

● ¼ cup flaxseed meal

● 1 ½ tablespoons swerve sweetener

● 1/8 teaspoon baking powder

● 1 egg

● 2 tablespoons coconut milk

Method:

Add all the dry ingredients into a bowl and stir.

Add the wet ingredients and stir until well combined. Pour the wet ingredients into the bowl of dry ingredients.

Divide the mixture into 10 greased mini muffin cups.

Place crumpled aluminum foil at the bottom of the cooker (this step can be avoided if your cooking pot is ceramic). Place the muffin molds inside the cooker.

Close the lid. Cook on ‘High' for 1-2 hours. Check after 1-½ hours of cooking. If it is not looking done, then cook for some more time. If you like the top to be dry, then uncover and cook during the last 40-60 minutes of cooking. For a medium top, you can place a chopstick on the top of the cooker before closing the lid.

Let it cool in the cooker for a while.

Cool slightly. Run a knife around the edges. Invert on to a plate and serve immediately.
