3 pounds oxtails (about 8 pieces)

Salt and pepper

2 tablespoons ghee or avocado oil, divided

3 stalks celery, chopped

½ cup chopped onions

1 tablespoon tomato paste

½ teaspoon dried thyme leaves

¼ teaspoon ground cloves

½ cup dry red wine

1½ cups beef broth (here)

1 medium turnip, cut into ½-inch cubes

½ teaspoon glucomannan powder or xanthan gum (optional)
