Chicken Madras

If you like your curries with a bit of a kick, this one is for you; however, you can adjust the spices to suit your own palate. I love this with broccoli rice and a dollop of raita (natural yoghurt, cucumber and fresh mint). If you want a creamier base, add some coconut cream instead of the bone/chicken broth – this will also help mellow the heat.

Ingredients

2 tbsp olive oil

2–3 red chillies, deseeded

3 garlic cloves

1 tbsp garam masala

½ tsp ground cinnamon

1 tsp ground coriander

1 tsp ground turmeric

1 tsp ground cumin

3 tomatoes

3cm piece of fresh ginger

1 tbsp tomato purée

a small handful of coriander leaves

1 large red onion, diced

750g boneless chicken, diced (breast, leg or thigh)

250ml hot bone or chicken broth (or use coconut cream, if preferred)

Put all the ingredients apart from the onion, chicken and broth into a food processor and whizz until you a paste forms.

If you are marinating the meat, place the chicken in a bowl or freezer bag, pour over the paste and turn to coat the chicken in the marinade. Leave for a few hours (you can skip this step if you don’t have time).

Preheat your slow cooker, following the manufacturer’s instructions.

Put the chicken, paste and diced onion into the slow cooker and stir to combine. Add the broth or coconut cream if you prefer a creamier base.

Set to Low and cook for 6 hours.

Serve with cauliflower or broccoli rice.

Top Tip

I like to marinate this for at least 2 hours before placing in the slow cooker. You don’t have to do this, but I think it definitely improves the flavour.
