For the Glaze:

⅓ cup powdered Monkfruit sweetener (or powdered / confectioners' sweetener of choice)

2-3 teaspoons almond milk or milk of your choice

Directions

Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.

In the bowl of an electric mixer fitted with a paddle attachment, beat the butter on high until light and creamy.

Add the lemon juice and lemon zest and mix until combined.

On low speed, gradually add blanched almond flour then powdered Monkfruit sweetener and vanilla and mix until the dough comes together.

Use a medium cookie scoop (or manually measure 1½ -tablespoon balls), scoop out 9 cookies, and transfer to the prepared sheet. If the dough seems too wet, add up to 1 tablespoon of almond flour.

Bake approximately 8-10 minutes or until just browned around bottom edges.

Transfer to wire racks; let cool completely.

While the cookies are cooling, make the glaze. In a medium bowl, whisk together powdered sweetener and milk. Drizzle over cooled cookies and enjoy immediately or place in the refrigerator until set.
