INGREDIENTS

½ tsp kosher salt

½ tsp black pepper

½ tsp paprika

¼ tsp garlic powder

12 oz. of trimmed flank steak

¼ cups of olive oil (extra-virgin)

2 tbsp balsamic vinegar

1 tsp Dijon mustard

4 cups arugula, firmly packed

½ red onion, vertically sliced

½ chopped ripe avocado

INSTRUCTIONS

Take a grill pan and heat it over the medium to high heat.

In a small bowl add salt, pepper and garlic powder; mix it all thoroughly.

Rub the spice mixture thoroughly and evenly over the steak. Bring the steak into pan; let it grill for at least 5 minutes on both the sides until you reach the desired degree of doneness.

Keep the steak on to a cutting board. Let it cool for 5 minutes. Now, cut the grain into thin slices.

Next, mix vinegar, oil and mustard in a large bowl, while regularly stirring with a whisk.

Add arugula, steak and onion; toss to coat.

Divide salad among 4 plates and dress evenly with avocado.
