CASHEW CHICKEN WITH BROCCOLI

My children love this recipe! They don’t care if it’s served with or without Fried Cauli-Rice (here). They even like the broccoli in it. I suspect it’s the wonderful Asian flavors and the crunch of the cashews that they enjoy most. The leftovers are even more delicious and perfect to set aside for lunches.

½ cup chicken broth

¼ cup coconut aminos, or 2 tablespoons lite soy sauce

2 tablespoons sugar-free rice vinegar

1 tablespoon toasted sesame oil

3 drops liquid sweetener (optional)

2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces

2 tablespoons ghee or avocado oil

3 cloves garlic, minced

2 tablespoons grated ginger

1 small onion, chopped

1½ cups broccoli florets, chopped

½ cup roasted unsalted cashew pieces (see Tips)

2 green onion tops, sliced, for garnish (optional)
