Chili, Sans Tomatoes

2 teaspoons olive oil

1 cup diced eggplant

2 jalapenos, finely diced

1 cup diced green bell pepper

1 cup diced red bell pepper

2 cups chopped yellow onion

2 cloves garlic, minced

1 pound ground beef

5 cups spinach

1⁄2 cup Vegetable Stock*

2 teaspoons sweet paprika

1 teaspoon cumin

1 can navy beans, drained and rinsed

1. Heat olive oil in a large pot over medium heat. Add eggplant, jalapenos, bell peppers, onion, and garlic, and sauté 4 to 5 minutes, until vegetables begin to soften and become aromatic. Remove vegetables from the pot and set aside.

2. Add meat to the same pot and break apart with a flat spoon or spatula. Once the meat is cooked and crumbled, add vegetables back to the pot and reduce heat to low.

3. Puree spinach in a food processor or blender with stock to create a smooth sauce.

4. Add pureed spinach and remaining ingredients to chili. Cover and let simmer at least 45 minutes, stirring occasionally to prevent burning.

5. Serve warm.
