Slow-Cooker Butternut Squash–Lentil Stew

1 cup chopped onion

1 cup chopped carrots

1 tablespoon olive oil

1 pound green lentils

1 teaspoon sea salt

2 cups Vegetable Stock*

2 cups cubed butternut squash

1⁄4 teaspoon cumin

1 teaspoon ground ginger

1 teaspoon garlic powder

1⁄4 teaspoon cinnamon

1 tablespoon chopped fresh sage

3 cups water

1. Turn your slow cooker to high setting.

2. Add all ingredients to the slow cooker. Stir gently to evenly distribute spices and vegetables.

3. Cook 21⁄2 to 3 hours. Stew should be thick and tender, and most of the liquid will be absorbed.

4. Serve warm.
