THE PERFECT PICNIC BURGER

I think I was the only kid who never liked burgers growing up, so when I was asked to re-create one, I was less than thrilled. Much to my surprise, this burger has become a huge hit with families, and me as well! The Perfect Picnic Burger is filling, full of flavor, and absolutely perfect for picnic packing!

1 cup walnuts

1 cup pumpkin seeds

1 cup chopped mushrooms

1/2 cup chopped carrots

1/3 cup chopped red bell pepper/

1/3 cup oil-packed sun-dried tomatoes, drained

1 Medjool date, pitted

2 tablespoons tamari

2 small garlic cloves

2 tablespoons olive oil

3 tablespoons Italian herb seasoning

Optional: 1/2 jalapeño pepper (test the heat of your pepper and adjust to taste)

1. In a food processor, combine all the ingredients and process until a sticky consistency. If your mixture is too wet, simply add a bit more walnuts and/or pumpkin seeds. Scoop out 1/4 cup and shape into patties. (Or make half-size patties for sliders.)

2. Set up a dehydrator and leave the trays unlined. Place the burgers on the trays and dehydrate for 12 to 18 hours.

MAKES 10 BURGERS OR 20 SLIDERS

BUILDING THE PERFECT PICNIC BURGER

Use butter lettuce instead of a bun, and top with slices of tomato, avocado, red onion, and raw sauerkraut (there are some great raw krauts popping up in grocery stores around our country). Try topping with my Better Than Ketchup.

One Perfect Picnic Burger with all the fixin’s: 234 calories, 18g fat, 11g carbohydrates, 4.9g sugar, 7.9g protein.
