Black Bean and Romaine Salad

Serves: 4 / Serving Size: 1 1/2 cups salad and 3 tablespoons dressing

Dressing

1/3 cup picante sauce

1/3 cup light mayonnaise

2 teaspoons cider vinegar

1 medium garlic clove, minced

1 teaspoon pourable sugar substitute

1 tablespoon water

Salad

4 cups chopped romaine

1 medium cucumber, halved lengthwise and sliced

1 medium poblano chili pepper, thinly sliced and cut into 2-inch pieces

1/4 cup diced red onion

1/2 (15.5-ounce) can no-salt-added black beans, rinsed and drained

1. Whisk together the dressing ingredients in a small bowl and set aside.

2. Combine all salad ingredients, except the beans, in a large salad bowl. Spoon equal amounts on four salad plates. Spoon equal amounts of the dressing on top and sprinkle with the black beans.
