CUDDLE TIME CHICKEN SOUP

It brings me joy to share this new chicken soup recipe with all of you. I made this just last week for my nephew and his husband. I didn’t tell them I got the recipe from Ethan. They get so funny about that. What? Oh, no dears. It’s not Ethan’s recipe. That boy’s too busy cooking up sexy, funny stories to muck about in the kitchen. He got this from Laura Baumbach. I love her books too.

You’ll need this soup to get through the hectic pace you’ll be keeping during the next month dear. It is fast and quite DELICIOUS. Enjoy.

Ingredients:

pre-roasted chicken

8 cups of chicken broth

4 carrots, peeled and sliced

1 bay leaf

1/3 cup lemon juice

salt and pepper to taste

chunk of Parmesan cheese

1/2 box of penne pasta or spaghetti

Romano cheese, grated

Buy a roasted chicken from your grocery store deli. Take the meat off, dice it up skin and all. Bring the chicken broth to a simmer on medium high heat. Add carrots, bay leaf, lemon juice, and salt and pepper. Add diced chicken and 1/2 box of pasta. Add the rind of a wedge of Parmesan cheese or a one inch wide chuck of it.simmer until the pasta is cooked. Grate Romano into the soup. Serve and enjoy! It’s quick, easy and delicious. The cheese adds a creaminess to it and the and lemon juice brings a brightness to the flavors. It’s the best Chicken soup recipe I’ve made.
