1 Peel the shallots, garlic and ginger and the outer tough leaves from the lemon grass. De-seed the chilli.

2 If you have a good food processor then literally throw all the ingredients in and whiz until you have a fairly smooth paste. If you feel your machine may struggle then give it a bit of help by pressing the garlic, grating the ginger and finely slicing the lemon grass, shallots and chilli.

3 Store the paste in the fridge and use within a week or freeze.

Thai Chicken Curry

Serves 2

You can vary this curry by substituting coconut milk or chopped tomatoes for the soya yogurt, coriander for the basil leaves and beef or lamb for the chicken. You could also add a few vegetables with the meat for a meat and vegetable curry—try broccoli, onions, mangetout, baby sweetcorn and courgette.
