2 firm pears, sliced
4 celery stalks, chopped
75g walnuts, roughly chopped
100g rocket leaves
juice of ½ lemon
1 Make the mayonnaise.
2 To make the salad, toss all the ingredients except the mayonnaise together and sprinkle over the lemon juice. Stir in 2–3 tbsp of the mayonnaise and serve. The remaining mayonnaise can be kept in an airtight container in the fridge for two or three days.

It’s worth it for the taste and it’s a cheap deal, too, as an octopus feeds many people. This salad is high in vitamins, minerals and omegas and low in saturated fat and calories. A good dinner party starter, or eat it as your protein over a week. Scale up the amount of salad to serve more people. MAKES ABOUT 10 SERVINGS
