1. PREHEAT THE OVEN to 450°F. Line a large rimmed baking sheet with aluminum foil.

2. COMBINE THE BREAD CRUMBS, onion powder, garlic powder, cinnamon, ¼ teaspoon salt, ¼ teaspoon pepper, and the canola oil in a shallow dish. Place the flour in another shallow dish. Place the egg in another shallow dish.

3. SEASON THE CHICKEN with the remaining ¼ teaspoon salt and ¼ teaspoon pepper. Coat a chicken breast in the flour, shaking off the excess. Then dip in the egg and dredge in the crumb mixture. Place the chicken in the prepared pan. Repeat with the remaining chicken breast halves.
