The father of C55H104O6

The data you need to calculate the average formula of the average fat molecule in your body was published in 1960 by the legendary obesity researcher Jules Hirsch. Hirsch retrieved samples of fat from his volunteers’ anaesthetised buttocks by poking them with a needle and pushing the plunger in and out several times. He then ran the samples through a process called gas-liquid chromatography to measure the precise concentration of the various fatty acids. Pooling his data reveals that an average human fat molecule consists of 55 carbon atoms, 104 hydrogen atoms and 6 oxygen atoms, which we write as C55H104O6.19
