Please note, this is not a thick caramel sauce. I wanted it to be thin enough to drizzle over ice cream without it quickly hardening.

FRIED EGG BLT SANDWICH

Nut Free, Dairy Free, No Added Sugar

This is the classic bacon, lettuce and tomato sandwich with the added goodness of a fried egg and avocado. I usually keep a few slices of Nut-Free Sandwich Bread (here) in the freezer to whisk up a comfort food meal in a matter of minutes!

MAKES 2 SANDWICHES

6 slices bacon

4 slices Nut-Free Sandwich Bread (here)

2 eggs

2 tbsp (30 ml) Ranch Dressing (here)

Lettuce leaves

1 small tomato, sliced

½ avocado, sliced

Warm a large skillet to medium heat. Cook the bacon slices until crispy. Set them aside on a paper towel.

Lightly toast your bread so that it is warm with slightly crispy edges.

Next, fry the eggs in the bacon grease until cooked to desired preference, although slightly runny yolks are best.

Cut your bread in half and spread both sides with ranch dressing. Add lettuce and tomato slices to the one half of the bread, then layer on the bacon, fried egg and avocado slices. Top with the other half of the bread.
