The next day, Yotsuha was in charge of making dinner.
Ordinarily, her grandmother and Mitsuha took turns doing the cooking, but when they were both busy, the job fell to Yotsuha. The Miyamizu family refrigerator was always stocked with side dishes they’d made ahead of time, so she didn’t have to fix too many things.
Yotsuha could already make simple recipes. Specifically, she could handle broiling and simple boiling, but stewed things were still difficult. She wasn’t allowed to fry anything. Even with those limited methods, she could prepare a dinner that counted as solid home cooking.
According to Yotsuha’s basic understanding, to cook all you really had to do was heat something thoroughly and then season it. As far as the fundamentals went, she was right. No one would be ashamed to serve a properly roasted fish with salt sprinkled over it. Additionally, if you cooked slices of mackerel in a frying pan, salted them lightly, and added store-bought seasoned miso sauce, you had miso-style mackerel. Once you thought up a few clever tricks, daily menu variations presented themselves naturally.
Where had she learned that mindset? From her sister, come to think of it. She wondered where Mitsuha had picked that up.
Um, chicken and…cabbage?
They’d bought a lot of chicken thigh meat from the farmers’ co-op while it was cheap and stocked the freezer with it, and people from the neighboring farms brought them cabbage so often she couldn’t remember ever having bought any.
Yotsuha thawed the chicken thighs in the microwave and cut them into bite-size pieces. She shredded the cabbage roughly by hand. She covered the bottom of the frying pan with kombu seaweed that had already been stewed to make broth, put the chicken on top of that, salted it almost imperceptibly, then surrounded the whole thing with cabbage. She set it on the gas stove at medium heat, and she was just about to add a little hot water and put the lid on it when the broth for the soup came to a boil, so she tossed in a ladleful of that instead. It was pan-roasted chicken and cabbage. Yotsuha hadn’t thought it up herself; she’d seen her sister make steamed salmon this way and had adapted the method. She thought she’d also seen a similar dish on a cooking program on TV.
For flavoring, she turned to store-bought seasonings. She’d intended to serve it with mustard-mayonnaise, but after finding bottles of ponzu sauce and white sesame paste in the fridge, she muttered, “Oh, this, this” and changed plans.
She prepared the rice and some miso soup with Okuhida miso (and tofu), plus leftovers from the fridge: stewed lotus root and celery cooked kinpira-style, sautéed and simmered. Then came the tomatoes and pickled vegetables (turnip, mini eggplant, and cucumber).
