Weight Watchers Absolutely Most Delicious
Persian Barberry Rice
1 Onion, Chopped
15 Ounces Barberries
1 Tablespoon Butter
1/2 Cup Chopped Onion, Fine
1 Teaspoon Cumin
2 Tablespoons Sugar
2 Cups Basmati Rice
6 Cups Boiling Water
1 Teaspoon Saffron, Ground
To prepare the barberries, spread out in a plate and remove any stems or gravel and rinse the barberries through several waters; soak in a colander immerged over water for 20 minutes. Drain, rinse again a couple of times and set a side. To prepare the rice, wash through 5 clean water rinses; place in a large bowl filled with enough water to cover the rice and 1-2 tablespoons of salt for 2 hours or overnight; drain well. Cook the barberries with the onion, butter and cumin oven low heat for 1 minute; be careful as barberries burn quickly. Add the sugar, mix well and set aside. Place a large heavy pot over high heat and add the 6 cups of water; bring to a rolling boil. Add the rice in a stream so the water will keep boiling. Boil uncovered for 8 minutes. Drain and rinse the rice in warm water well. Reserve one cup of the boiling liquid. Add 1 tablespoons of butter to the bottom of the heavy pot and let melt moving the butter around to coat the complete bottom. Pour in the rice. Cover tightly and cook for about 45-50 minutes. To serve, place the rice on a huge rice plate forming a pyramid. Combine the 1 cup reserved boiling water with the saffron and stir to dissolve. Remove 2 ladles of the rice and place in a small bowl. Mix this rice with the saffron well. Sprinkle this rice back on top of the rice, covering the whole top layer of the rice. Decorate the rice with the cooked barberries and any design you like, spreading around the rice mound well.
