INGREDIENTS

1 can (15 ounces) white beans, drained and rinsed

1 roasted red pepper, cut into 3 pieces

¼ cup yogurt cheese

1 garlic clove, peeled

1 tablespoon lemon juice

½ teaspoon salt

½ teaspoon ground black pepper

DIRECTIONS

Place all the ingredients in a food processor fitted with the chopping blade; process until creamy, scraping down the inside of the bowl once or twice.

YIELD: 4 servings

TIPS: Serve with cut-up celery, cucumber rounds, baby carrots, and broccoli florets. Bring those to work or school in a separate container for a quick lunch.

Dip stores well in a sealed container in the fridge for up to 3 days.
