Shepherd’s Pie

yield: 6 servings • prep time: 20 minutes • cook time: 50 minutes

2 tablespoons avocado oil

½ cup sliced mushrooms

¼ cup chopped onions

2 cloves garlic, minced

2 slices bacon, chopped

1½ pounds ground beef

1 cup tomato sauce

¼ cup beef broth

1 tablespoon Worcestershire sauce

½ teaspoon ground black pepper

1 (16-ounce) bag frozen cauliflower florets

2 tablespoons heavy cream

2 tablespoons salted butter

Salt

½ cup shredded cheddar cheese

Chopped fresh chives, for garnish

1. Preheat the oven to 350°F.

2. Heat the oil in a medium-size cast-iron or other ovenproof skillet over medium heat. Add the mushrooms and onions and stir to coat in the oil. Cook until the vegetables are tender and the onions start to caramelize, about 10 minutes. Stir in the garlic and cook for 1 more minute.

3. Add the bacon and ground beef to the skillet, crumbling the beef as it cooks. Cook until the beef is no longer pink. Add the tomato sauce, broth, Worcestershire, and pepper to the beef mixture. Simmer until the liquid starts to cook down and the mixture is slightly thickened, about 15 minutes, then remove the pan from the heat.

4. Meanwhile, steam the cauliflower according to the package directions. Make sure the cauliflower is fall-apart tender. Drain the excess liquid.

5. Place the cauliflower in a food processor or high-powered blender. Add the cream and butter and pulse until the mixture is smooth and creamy. Season with salt and pepper to taste.

6. Spread the mashed cauliflower evenly over the beef mixture and top with the cheese. Bake for 20 to 25 minutes, until heated through and the cheese is melted. Garnish with chives and serve immediately. Leftovers can be stored in an airtight container in the refrigerator for up to 5 days.
