To make the dressing: In a small jar or lidded container, combine the olive oil, vinegar, salt, sugar substitute, and garlic. Shake to blend. Set aside.

To make the salad: In a large bowl, combine the tomatoes, chickpeas, cucumber, bell pepper, cilantro, and chives. Drizzle with the dressing and toss.

Skinny Palm Salad

This tropical low-calorie salad is great for the girl on the go. Toss it into a plastic to-go container and you’re out the door. Hearts of palm should be available in the jarred-food aisle of most grocery stores. Top with some grilled chicken or salmon for added protein, or, if you’re in the Melt phase, jazz it up with some baby spinach and sliced strawberries.
