In a blender, add the sour cream, buttermilk, mayonnaise, dill, garlic, lemon juice and avocado. Blend until combined, then transfer the dressing to a bowl. Add the chives, salt and pepper, and stir until combined. Refrigerate the dressing until ready to serve.

Place the chicken on a cutting board. Use one hand to press it down while you cut horizontally all the way through the chicken to get four evenly thick filets (about ½ inch [1 cm]).

In a small bowl, mix the salt, garlic powder, pepper and paprika. Spread the spice mixture all over the chicken until the spices cover both sides of the filets.

Place the panko on a small plate. Place the beaten egg in a shallow bowl. Dip both chicken filets in the beaten egg, then the panko. Spray both sides of the chicken with cooking spray. Place the chicken in the air fryer, and cook on 355°F (180°C) for 14 to 15 minutes (or in an oven preheated to 355°F [180°C]).

When the chicken has about 4 minutes left, divide half of the olive oil among two large pans, and heat over medium heat. Place the hamburger buns cut side down in the pans, and cook until golden brown, about 2 minutes.

Place the bottom buns on four separate plates. Add 4 pickles to each bun, followed by a crispy chicken filet. Add 1 tablespoon (15 ml) of the Avocado–Ranch Dressing on the top bun for each burger, and place the bun on top of the chicken. Add a quarter of the leftover dressing to the side of each plate, preferably in a small shallow bowl to dip the burger in while eating.
