Super Salmon Puree

Makes about 1 cup

Salmon is a true superfood! It’s packed with nutrients, including omega-3 fatty acids, which are crucial for your baby’s brain and eye development. Try to use wild salmon if possible. Alaskan salmon in particular is low in mercury, is environmentally friendly, and often has a superior flavor. If it’s too expensive, choose a sustainably farmed salmon.

Water or low-sodium chicken or vegetable broth

8 ounces salmon filets, skinned

To Poach the Salmon:

Fill a large saucepan with about 2 inches of water or broth and bring to a simmer. Add the salmon to the pan in a single layer, making sure it is covered by liquid (add more liquid if needed).

Turn the heat to low so that the water is bubbling gently and cover the pan. Cook 7–10 minutes until salmon is cooked through. Drain the fish, reserving some of the cooking liquid.

To Roast the Salmon:

Preheat oven to 400°F.

Brush a baking sheet lightly with olive oil. Place the salmon on the baking sheet and cook in the oven for 15 minutes or until the flesh flakes easily with a fork. Remove from the oven and cool.

Once the Salmon is Cooked:

Break the salmon into pieces, checking for any small bones. Transfer the salmon to a food processor with a small amount of the cooking liquid and puree to desired consistency. Or, when the baby is older, mash the fish with a fork. Cool and serve or store.

Flavor boost: add a bay leaf, dill sprigs, or lemon slices to the poaching liquid
