Eat this pumpkin mashed (try it with a drizzle of Creamy Ginger Lemon Honey Dressing described later) or use it as the base of a pumpkin soup.

Steamed Asparagus

Nothing tastes quite like freshly picked asparagus. I assure you, it’s quite different from even one-week-old store-bought asparagus. When it’s fresh, as with all fresh veggies, it’s bursting with juice and is a lot more flavorful. When asparagus is in season in your local area, eat it raw with a dip or try simple steamed asparagus as a side dish, or even as a main!

Place water in the bottom half of a steamer-pan set and turn on the stove to high heat.

Wash and trim one bunch of asparagus (although you don’t need to trim the ends if the asparagus is super fresh!).

Place the asparagus in the top half of the steamer-pan set and cover with a lid.

Bring the water to the boil and steam the asparagus for three to five minutes, depending on the thickness of the asparagus, or until asparagus is tender. Avoid over-steaming.

Remove lid and drain.
